β€’2 tablespoons butter
β€’1 cup dry white wine
β€’1/4 cup chopped fresh basil
β€’6 garlic cloves, minced
β€’2 teaspoons grated lemon rind
β€’3 pounds fresh mussels, scrubbed
β€’3 tablespoons olive oil
β€’1 small onion, chopped
β€’2 large tomatoes, coarsely chopped
β€’Warm, crusty bread

Cooking Instructions

    Heat olive oil in a large, deep skillet over medium-high heat; add onion and garlic, and saut 3 to 5 minutes or until tender.

    Add wine and tomatoes, and bring to a boil.

    Add mussels; cover and cook 3 to 5 minutes or until mussels open. Discard any unopened mussels.

    Add basil, lemon rind, and pepper to liquid in pan; add butter, and swirl in pan until melted. Spoon sauce over mussels.
