Ingredients

β€’2 lbs uncooked 95% lean ground beef
β€’2 bay leaves
β€’2 medium carrots, diced
β€’1 teaspoon dried thyme
β€’3 tablespoons flour
β€’2 cloves garlic, minced
β€’2 tablespoons light butter (I used Land O'Lakes)
β€’Β½ cup milk
β€’1 medium onion, diced
β€’ΒΎ cup frozen peas
β€’2 Β½ lbs peeled and chopped potatoes
β€’2 cups reduced sodium beef broth

Cooking Instructions

  1. 01

*You may want to do steps one and two concurrently to save time

  2. 02

Place the ground beef in a large walled skillet or saute pan and bring over medium-high heat. Cook, breaking the meat up into small pieces until browned. When the meat is cooked through, reduce the heat to medium and add the onions and carrots. Stir to combine and cook for 8-10 minutes, stirring occasionally, until the vegetables are soft.

  3. 03

Sprinkle with salt and pepper to taste.

  4. 04

Add the peas and stir together. Cook for another minute and then add the garlic, flour and tomato paste. Stir to combine and cook for a minute until the flour is blended.

  5. 05

Add the broth, Worcestershire sauce, thyme and bay leaves and stir together. Bring to a simmer (this happened quickly for me) and reduce the heat to low. Simmer uncovered for 8-10 minutes, stirring occasionally, until the sauce has thickened and is coating the meat and vegetables.

  6. 06

Remove the bay leaves and transfer the mixture into the bottom of a 913 casserole dish.

  7. 07

Spread evenly and set aside.Pre-heat the oven to 425 degrees.

  8. 08

Place the chopped potatoes at the bottom of a large pot and cover them in salted cold water.

The Caprese Salad Skewers recipe was a triumph! I prepared them for a party's barbecue and everyone loved them. The basil was so aromatic, the mozzarella so fresh, and the skewers were the perfect size and an appropriate.
