Sticky Roasted Vegetables with Sesame-Miso Dressing

A mouth-watering salmon bowl featuring perfectly seared salmon glazed with a luscious honey garlic butter sauce, served over fluffy rice with crisp vegetables and a sprinkle of sesame seeds.
Cook jasmine rice according to package directions. Set aside and keep warm.
Pat salmon fillets dry with paper towels. Season both sides generously with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Place salmon skin-side up and sear for 4-5 minutes until golden crust forms.
Flip salmon carefully and cook for another 3-4 minutes until cooked through. Remove salmon from skillet and set aside.
In the same skillet, reduce heat to medium and add butter. Once melted, add minced garlic and sauté for 30 seconds until fragrant.
Add honey, soy sauce, rice vinegar, and sesame oil to the skillet. Whisk together and simmer for 2-3 minutes until sauce thickens slightly.
Return salmon to the skillet and spoon the sticky glaze over each fillet. Cook for 1 minute, basting continuously.
Assemble bowls by dividing rice among 4 bowls. Top each with glazed salmon, cucumber slices, edamame, and avocado.
Drizzle remaining glaze from the skillet over each bowl. Garnish with sesame seeds and sliced green onions. Serve immediately.
